* Exported from MasterCook * Fresh Asparagus With Herb Butter Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 Lb. asparagus -- (2 1/2 to 3) 1/2 Tsp. salt Herb Butter: 1/2 C. butter or margarine -- melted 2 Tbsp. finely chopped parsley 1 Tbsp. snipped chives 1/2 Tsp. dried tarragon leaves 2 Tbsp. lemon juice Break or cut off tough ends of asparagus stalks. Wash stalks well with cold water; if necessary, use a soft brush to remove grit. With vegetable parer, scrape skin and scales from lower part of asparagus stalks. In large skillet, add salt to 1 1/2 inches water; bring to boiling. Add asparagus spears. Boil, covered, 8 to 10 minutes. Meanwhile, make Herb Butter. In a small bowl, combine the melted butter or margarine, parsley, chives, tarragon and lemon juice. Stir until well combined. To serve, drain asparagus well. Arrange on warm platter.
