* Exported from MasterCook * Corn Fritters Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Fritters Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 C. unsifted all-purpose flour 2 Tsp. baking powder 1 Tsp. granulated sugar 1/2 Tsp. salt 1 Large egg -- lightly beaten 1/2 C. milk 1 Can corn -- (1 lb.) drained (kernel corn) salad oil for frying confectioners sugar In medium bowl combine flour, baking powder, granulated sugar and salt. Mix well with fork; stir in egg, milk and corn until flour mixture is just moistened. Over medium-high heat, in large skillet, heat 1/4-inch oil. Drop corn mixture by level tablespoonfuls (5 at a time) into skillet. Cook 3 to 4 minutes on each side or until fritters are golden brown. Drain well on paper towel lined tray. Repeat with remaining corn mixture. Dust fritters with confectioners sugar. Serve warm. Makes about 1 1/2 dozen fritters. - - - - - - - - - - - - - - - - - -
