* Exported from MasterCook * GREEN BEANS WITH OLIVES Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb Green beans 1 tb Butter 1 tb Olive oil 1 sm Garlic clove, minced 2 Scallions, finely chopped 1/2 c Pimento-stuffed green olives -- sliced 1 1/2 tb Lemon juice Salt and pepper Cook beans in a large pot of boiling salted water until just tender-crisp, 3 to 5 minutes. Drain in a colander and plunge immediately into ice water to stop the cooking. Drain again, and cut into 1" pieces. Set aside. Heat butter and olive oil in a large skillet. Add garlic and scallions and saute until softened. Add beans, olives and lemon juice; saute until heated through. Add salt and pepper to taste. Serve immediately.
