Add a whole clove of garlic, skin off, for every potato. Add salt to the water if you would like. Bring to a boil and simmer until potatoes are soft enough to beat. Drain water, retaining boiled potatoes AND garlic. Add salt and pepper to taste and enough nonfat (skim) milk to beat smooth. Beat entire mixture, including cooked garlic. I serve immediately with a heaping mound of steamed broccoli or squash or green beans or whatever I've got. Don't be afraid to make too much, I always do and rarely have leftovers. And when I do, they reheat very nicely.
