                            Cajun French Fries

  15      pounds        potatoes
     1/2  cup           olive oil
     1/2  cup           cajun seasoning -- up to 3/4

Peel and cut potatoes into french fry cuts. Toss with olive oil and cajun seaso
ning. Put on cookie sheets and bake at 350 for 15 minutes. Remove from oven and
 cool. Place in freezer bags. Freeze.

To cook: Remove from freezer bag and place on cookie sheet. Place in 350 oven f
or 30 minutes or until golden.
