* Exported from MasterCook * Creamed Salsify Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 bunches salsify -- or oyster plant 2 tablespoons melted butter -- or other fat 2 tablespoons flour 1 cup milk 1/2 teaspoon salt pepper 1 tablespoon chopped parsley Wash the salsify, scrape, cut into small pieces, and drop into cold water to pr event it from turning dark. Boil in an uncovered pan in a small quantity of un salted water for 30 minutes, or until tender, and drain. Prepare a sauce of th e fat, flour, milk, salt, and pepper, pour this over the cooked salsify, reheat , and serve with the chopped parsley sprinkled over the top.
