* Exported from MasterCook * Vegetable Curry Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup rice 1 cup diced onions 1 cup diced carrots 1 cup diced celery 1 cup peas -- fresh or canned 4 tablespoons butter -- or other fat 1/2 teaspoon salt 1/4 teaspoon curry powder 2 teaspoons worcestershire sauce Wash the rice and cook in 2 quarts of boiling salted water. Drain in a colande r, pour cold water through, and let stand over steam until the grains swell and become separated. Cook the vegetables in a small quantity of water and just b efore removing from the stove add the canned peas, or if fresh peas are availab le, cook them with the other vegetables and add the fat, salt, curry, and sauce . On a hot platter make a ring of the cooked rice, pile the vegetables in the center, pour over them the liquid mixture, and serve very hot.
