* Exported from MasterCook * Ratatouille--Version #3 Recipe By : Contributed by Alexus (Fabfood) Serving Size : 1 Preparation Time :0:00 Categories : Eggplant Zucchini Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 Cup olive oil 1 Medium onion -- chopped very fine 1 Clove garlic -- chopped very fine 1 1/2 Pounds eggplant -- peeled & cubed 2 Medium zucchini -- sliced-peel on 3 green peppers -- cut in strips Salt and pepper Basil 6 ripe tomatoes -- peeled & seeded Saute the onion and the garlic until soft. Add eggplant and zucchini, toss well . Then add the pepper strips, salt and pepper to taste and the basil. Simmer c overed until the vegetables are soft. Add tomatoes and allow them to cook down with the vegetables until the mixture is thick and well blended. Serve hot or c hilled, with additional olive oil and lemon juice.
