* Exported from MasterCook * Garden Patch Barley Medley Recipe By : Life & Times: Idaho State Journal: 6-30-99 Serving Size : 6 Preparation Time :0:00 Categories : Vegetables Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 3/4 cup regular pearl barley 1 large onion -- sliced and separated -- into rings 1 clove garlic -- finely chopped 2 cups vegetable broth 2 large tomatoes -- cut into wedges 2 large carrots -- sliced 1 medium green bell pepper -- seeded and cut into -- 1 inch strips 1 medium zucchini -- sliced 1 cup cauliflower florets 1 cup broccoli florets 2 cups fresh green peas -- or 1 package frozen green peas -- 10oz 1 teaspoon Italian herbs salt and pepper -- to taste Heat oil in large skillet. Add barley, onion rings and garlic. Saute over medium heat about 5 minutes or until barley and onions are golden. Add broth; cover and cook 30 minutes, stirring occasionally.
