MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Fried Green Tomato Stacks Categories: Vegetables, Breads, Herbs, Citrus, Pork Yield: 4 servings 1/4 c Mayonnaise 1/4 ts Lime zest; grated 2 tb Lime juice 1 ts Fresh thyme; minced -OR- 1/4 ts Dried thyme 1/2 ts Pepper; divided 1/4 c A-P flour 2 lg Egg whites; lightly beaten 3/4 c Corn meal 1/4 ts Salt 2 md Green tomatoes 2 md Red tomatoes 2 tb Oil 8 sl Canadian bacon Mix the first 4 ingredients and 1/4 ts pepper; refrigerate until serving. Place flour in a shallow bowl; place egg whites in a separate shallow bowl. In a third bowl, mix corn meal, salt and remaining pepper. Cut each tomato crosswise into 4 slices. Dredge 1 slice in flour to lightly coat; shake off excess. Dip in egg whites, then in corn meal mixture. Repeat with remaining tomato slices. In a large nonstick skillet, heat oil over medium heat. In batches, cook tomatoes until golden brown, 4-5 minutes per side. In same pan, lightly brown Canadian bacon on both sides. For each, stack 1 slice each green tomato, bacon and red tomato.
