* Exported from MasterCook * Tomatoes A La Provencale/Baked Tomatoes Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Tomatoes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ripe -- round tomatoes, cored and halved salt and freshly ground pepper to taste 8 garlic cloves -- pressed 3/4 C. freshly ground bread crumbs a handful fresh -- flat leaf parsley -- finely minced 3 Tbsp. extra virgin olive oil Preheat oven to 400 degrees. Arrange tomatoes cut side up in a large baking dish. (Unless the tomatoes are exceptionally watery, do not seed or drain them; they will better hold their shape.) Season generously with salt and pepper. Slice the garlic into thin chips and sprinkle over tomatoes. Combine bread crumbs and parsley and scatter over tomatoes. Drizzle with oil.
