Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Tomatoes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 Medium ripe tomatoes salt and pepper 1 Medium bell pepper -- diced 1 Small onion -- diced 1/2 Stick butter -- melted 1 C. cooked rice 1 egg -- well beaten 1/4 Tsp. oregano 1/4 Tsp. ground basil 1/2 Tsp. salt 1 C. grated sharp cheese 4 Slices bacon -- cooked and crumbled Wash and cut tops off tomatoes. Cut insides out of tomatoes and dice. Sprinkle inside tomatoes with salt and pepper. Saute onion and pepper in butter. Add diced tomatoes and other ingredients to butter mixture. Stuff tomatoes with mixture. Place tomatoes in shallow baking pan with about 1/2 cup water. Bake at 350 degrees for 20 minutes. Makes six servings. - - - - - - - - - - - - - - - - - -
