* Exported from MasterCook * Spanish Mackerel Stuffed Tomatoes Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Tomatoes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 C. flaked -- smoked Spanish mackerel or other smoked fish -- fresh or frozen 6 Large tomatoes 1 Tsp. salt 1/2 C. mayonnaise 1/2 C. plain yogurt 1 Tbsp. finely minced green onion 1 Tsp. mustard -- dried 1/2 Tsp. pepper Thaw fish if frozen. Cut small slice off bottom of tomatoes so they will sit upright. Cut thin slice from top; carefully scoop out centers of tomatoes. Discard pulp. Sprinkle tomatoes with salt lightly. Invert on absorbent paper. Chill for 1 hour. In medium bowl, mix fish, mayonnaise, yogurt, green onions, dried mustard and pepper. Fill tomatoes with smoked fish mixture. Makes 6 servings.
