1 large zuchini (grated - 1 cups fresh corn (or use frozen) 1/2 large onion (grated) or to taste 3 eggs (or use eggbeaters) salt and pepper to taste 1 tblsp flour Optional: fresh shrimp, shelled and deveined. Coarsely chop. Mix all ingredients well - the mixture should be thick. Drop by the tablespoon on greased, hot griddle. Cook until firm and lightly browned on both sides, turning once.
