1 lb lean ground turkey 1 onion, chopped 1 green onion, chopped 1 tbsp corn oil (or olive, or canola) 1 10-oz can Rotel tomatoes with green chilies (or other spicy brand) 1 8-oz can tomato sauce 1 6-oz can tomato paste 1 bell pepper, chopped 1/2 tsp oregano 1/2 tsp salt 1/4 tsp black pepper 1/2 tsp garlic salt 4 medium zucchini, sliced crosswise 1/4" thick 1/2 cup grated parmesan cheese Makes: 6 servings Sautee ground turkey and onion in oil until meat is browned and crumbly. Add Rotel tomatoes, tomato sauce and paste, and green pepper. Simmer for 10 minutes, stirring occasionally. Blend in oregano, salt, pepper, and garlic salt. Add zucchini and simmer another 10 minutes. Put all into a shallow ungreased 3-quart casserole dish and sprinkle with the cheese. Bake at 350 for 45 minutes.
