MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Black Bean Freezer Breakfast Burritoes Categories: Mexican Yield: 8 Servings 1 pk Extra-firm tofu; drained 1 md Onion; diced -OR- 1/3 lg Onion; diced 2 cl Garlic; up to 3; minced or -grated 1 cn Diced potato 1 cn Black beans; drained and -rinsed 1 cn Diced tomatoes 1/4 c Nutritional yeast 2 ts Chili powder 1 1/2 ts Ground cumin 1 ts Salt 3/4 ts Ground turmeric 1/2 ts Black pepper 1 bn Fresh spinach; stems removed -and chopped Several tortillas Cook onion for 5-7 minutes. Add garlic and cook for 2 more minutes. Add potato and crumbled tofu. Stir in chili powder, cumin, black pepper, salt, turmeric, and nutritional yeast. Cook for 5 minutes. Add black beans and tomatoes. Cook for 5 minutes. Add spinach and cook until wilted. Let cool. Scoop filling into tortillas. Roll into burritoes. Wrap and freeze, or refrigerate (for up to a week).
