MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Broccoli and Salmon Strudel Categories: Salmon, Pastry Yield: 4 Servings 2 Broccoli heads; chop fine 1 Leek; chopped fine 1 cl Garlic; crushed 2/3 c Stock, chicken or vegetable 2 Spring onions; sliced 1 bn Cilantro; chop (optional) 210 g Red salmon; drained 4 sl Phyllo pastry Preheat the oven to 200 C. Saute the broccoli, leek & garlic in the stock until the the veges have softened & the stock evaporated. Take off the heat & stir in the spring onions, coriander & fish. Place the 4 sheets of phyllo on a working surface & pile the broccoli salmon filling into the middle to form a log shape. Roll up each parcel & place the strudels on a baking tray lined with baking paper. Lightly brush each strudel with beaten egg white or give a spray of olive oil.
