MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Company Chicken OAMC Categories: Oamc Yield: 2 Casseroles 2 ea Very large boneless chicken - breast - butterflied - (all fat removed) 12 sl Deli ham 2 c Cream of chicken soup - undiluted 1 c Whipped cream cheese Place two slices of ham on bottom of two 8x8" Gladware Freezer Casserole containers. Butterfly the two large boneless chicken breasts.- each breast weighed one pound (ending with 4 pieces). Two chicken pieces in each of the two casserole dishes. (If smaller chicken breasts, more than the two will fit into the casserole. That will increase the need for more ham slices. Wrap each of the 4 chicken breasts in one or two slices of ham, forming a package with the ham seam down at the bottom. Place two ham wrapped breasts in each of the two casserole dishes. Mix together the undiluted cream of chicken soups and the whipped cream cheese. Throughly mix. Divide the sauce mixture evenly into each casserole, covering chicken and making sure some of the mixture covers space between meat and casserole. To Bake: Remove from freezer and let defrost in fridge over night. Preheat oven to 225 degrees F - bake uncovered for 3 hours. Serve each breast with some sauce on the meat and the remainder of the sauce on the side to be served over rice or noodles.
