MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Lemon Spaghetti Categories: Pasta, Herbs, Citrus, Cheese Yield: 4 servings 2/3 c Parmesan cheese; - fresh grated 2/3 c Extra virgin olive oil 1 tb Lemon zest 1/2 c Fresh lemon juice 3/4 ts Salt 1/2 ts Fresh ground pepper 1 lb Dried spaghetti 1/3 c Fresh basil; chopped In a large bowl, whisk together the cheese, oil, lemon zest and juice, salt and pepper. Set aside. Meanwhile, bring a large pot of water to a boil and season generously with salt. Add the spaghetti and cook, stirring occasionally, until al dente. (Check the package for a suggested cook time.) Reserve 1 cup of the cooking liquid and drain the pasta. Add the spaghetti to the bowl with the sauce, along with the basil. Toss the pasta with enough of the reserved cooking liquid to moisten, starting with 1/4 cup and adding more as needed. Taste and adjust the seasonings, if desired. Divide among bowls and serve.
