* Exported from MasterCook * Veal Birds With Apples Recipe By : Freeze With Ease copyright 1965 Serving Size : 12 Preparation Time :0:00 Categories : Beef Freezer Meals Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 c Butter 3 c Onion -- finely chopped 7 1/2 c Soft bread cubes 3 c Apples -- peeled and coarsely - chopped 1 tb Salt 1/2 tb Poultry seasoning 4 1/2 lb Veal 6 tb Flour 6 tb Butter 3 1/4 c Apple cider Melt 3/4 cup butter in large skillet. Add onion and saute until golden. Add soft bread cubes, apples, salt, and poultry seasoning. Cook stirring over medium heat about 6 minutes. Divide veal into 36 scallops and pound until thin. Place 1 heaping tb stuffing on each veal scallop. Roll up and secure with wooden picks. Dredge each roll in flour. Heat 6 tb butter in skillet. Brown rolls well on all sides. Add apple cider. Freeze in portions suitable for your family. To Serve: Defrost and simmer rolls 30 to 35 minutes in cider in covered skillet.
