* Exported from MasterCook * Eggplant Recipe By : Freeze With Ease copyright 1965 Serving Size : 12 Preparation Time :0:00 Categories : Beef Freezer Meals Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup olive oil 4 green peppers -- minced 4 eggplants -- pared and cut in -- 1" dice 2 cloves garlic -- sliced 2 large onions -- minced 32 ounces Spanish style tomato sauce 4 teaspoons salt 1 1/2 teaspoons freshly ground pepper 2 teaspoons brown sugar 3/4 cup parmesan cheese -- grated 3 pounds ground chuck -- browned, opt. Heat olive oil in skillet. Stir in green peppers, eggplants, garlic and onions. Cook over low heat until they begin to brown. Stir in tomato sauce, salt, grou nd pepper and brown sugar. Cook slowly until eggplant is tender. Chill quickly and freeze in portions suitable for your family. To serve: Defrost and add 1/4 cup grated parmesan cheese for every 4 servings.
