MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Chile Relleno Spring Rolls Categories: Appetizers, Chinese Yield: 12 Servings 2 lb Lean ground meat or poultry 2 Maui onions; chopped 1 bn Green onions; chopped 2 cl Garlic; minced 1 ts Ground cumin Salt and pepper; to taste 2 lb Roasted green chile; chopped 1 ts Fresh oregano leaves; -chopped 2 lg Potatoes; cubed 4 c Cheddar or jack cheese; -shredded 2 lb Egg roll wrappers Salad oil for frying Hoisin sauce or salsa In a saucepan, brown meat; drain oil. Add onions, garlic, cumin, salt, and pepper; cook, stirring, until onions are golden brown. Add green chile; cook for 2 minutes. Add oregano and potatoes; cook until potatoes are done. Remove from heat and add cheese; stir until cheese melts. Cool to room temperature. To make rolls, place 2 tb of meat mixture in center of a wrapper. Fold lower corner of wrapper over mixture, tucking point under mixture. Fold left and right corners towards the center and roll, sealing edges with water. Continue until all wrappers are used.
