* Exported from MasterCook * B-L-T Tidbits Recipe By : The Big Beautiful Book of Hors d'Oeuvres by Julia Weinberg Serving Size : 1 Preparation Time :0:00 Categories : Appetizers Hors d'Oeuvres Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup mayonnaise 1/4 cup sweet pickle relish -- well drained 8 slices white bread 16 strips bacon 4 lettuce leaves 4 slices cheese (Monterey jack, cheddar or Swiss) 12 thin slices tomato 30 cocktail onions cellophane-tipped toothpicks Combine the mayonnaise and relish. Toast the white bread and spread slices generously with the mayonnaise-relish mixture. Fry the bacon until crisp. Drain well on paper towels. Place the bacon slices side by side on 4 pieces of toasted bread, covering the entire surface. Top the layer of bacon with a lettuce leaf and slice of cheese. (Don't worry about the overlap, as it will be trimmed off.) Top with another toast slice. Trim the crusts off the sandwich and mentally divide it into 9 1-inch squares. Skewer a cocktail onion on a cellophane-tipped toothpick and insert in the center of each imaginary square. Make 3 equidistant vertical slices, keeping the sandwich together. Make 3 equidistant horizontal slices to produce 9 cubes, and serve. Special Hints: To prevent the tidbits from becoming soggy, purchase firm tomatoes and drain the pickle relish well. Do-Ahead Note: Prepare the sandwich several hours ahead of time but do not garnish or cut. Just before serving, heat the foil-wrapped sandwiches until warm, then garnish and cut into cubes.
