---------- Recipe via Meal-Master (tm) v8.05 Title: Oriental Shrimp Toast Categories: Ethnic, Appetizers, Seafood Yield: 40 Servings 1 Scallion 1 tb Ginger 1 lb Shrimp, shld & deveined 1 Egg 1 ts Sherry 1 ts Soy sauce 2 ts Sesame oil 1/2 ts Salt 40 slices 1/4" thick, about 2-3 ea French baguettes Chop scallion & ginger in a food processor. Add shrimp; process to a paste. Remove mixture to a bowl. Add egg, sherry, soy sauce, sesame oil and salt to paste; combine well. Top each slice of bread with 1 Tbs of mixture. Press it down gently so that it doesn't come off when frying. Heat wok on a high heat. Add 2 cups oil, heat oil to 350.
