In a small bowl combine the brown sugar and cinnamon. Set aside. In a medium-sized bowl, whisk the egg white until frothy. Stir in the vanilla extract, almonds, and reserved brown sugar mixture. Spread the almonds in a single layer on a baking sheet and bake them, stirring every 10 minutes, until they are dry, about 30 minutes.
