* Exported from MasterCook * Garlic Butter Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Condiments Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 Cup lightly salted butter -- at room temp 2 Cloves crushed garlic In a medium bowl, cream the butter with wooden spoon until light and fluffy. Add the garlic and blend well. Transfer to a sheet of heavy-duty foil, roll the foil around the mixture, forming a log 8 inches long by 3/4 inch in diameter. Tuck in the ends of the foil, label and freeze. Will keep for up to 2 months. Use to flavor potatoes, bread, other cooked veggies, Rice pasta and pasta sauces. I really like to keep these "butters" on hand in the freezer for special times. They are especially attractive when company comes, special dinners or holiday meals. Use to flavor rice and veggies or to spread on bread. A 1/4" slice equals 1 tsp. a 3/4 " slice equals a Tbsp. I prepare the butter, place in a decorator tube, (pastry bag or just a plain OLE baggy with the corner snipped.) I make my design on a jellyroll pan, cover with plastic wrap, freeze until hard, place in gallon-sized bags. Sometimes, I just roll up into a log and freeze that way.
