In 6 to 8-quart pot, over medium-high heat, heat lemon juice for 1 minute. Add peaches and sugar; bring to boil, stirring constantly. Reduce heat to medium; cook and stir until mixture is like thick applesauce (20 minutes). Immediately ladle into hot jars, leaving 1/4" headspace. Wipe jar tops and threads clean.
