See notes below for orig inal recipe.) Simmer all ingredients approximately 2 - 2 1/2 hours on low/medium heat until d esired consistency. Yield: Approximately 7 Qts. Sherilyn's Notes: If fruits are overly ripe, cook celery, peppers, onions and apples at least 30 minutes ahead of adding ripened fruit. The fruits will say firmer through the cooking process. Because I like a thicker type pickle and I increased the amount of fruit in this recipe. ORIGINAL RECIPE FROM TERESA: 15 tomatoes, 3 apples, 3 pears, 3 peaches, 3 cups sugar, 2 1/2 cups vinegar, 3 onions, 1 1/2 tbsp pickling salt, 1 green pepper, 1/2 head celery and 1 tsp pickling spice.
