* Exported from MasterCook * Steamed Salmon Sauce Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Seafood Sauces Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 c Onions -- chopped 4 Canned plum tomatoes -- chopped 2 cl Garlic -- minced Salt and pepper -- to taste 1 tb Orange zest -- grated 4 Skinless salmon filets (4 oz ea) 1/2 c Orange juice 1 ts Virgin olive oil 1/2 c White wine 4 Basil leaves In a small saucepan simmer 1/4 cup chopped onions, 2 minced garlic cloves, and 1 tb finely grated orange zest in 1/2 cup orange juice and 1/2 cup white wine until reduced to 1/4 cup. Add 4 chopped canned plum tomatoes and salt and pepper to taste. Season four 4 oz pieces of skinless salmon filets with salt and pepper, and drizzle with 1 ts virgin olive oil. Top each piece of fish with a basil leaf and place on the simmerring sauce. Cover and steam for 8 to 10 minutes, until the fish is opaque and flakes to a gentle touch.
