Add garlic and cook 1 minute. Add tomatoes, salt and pepper and bring to a boil. Add sugar. Simmer over low heat for 1 hour, stirring a few times and adding very little water if needed. Add oregano and basil off the heat. I also remembered that it is the seeds that make the sauce bitter.
