MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken Chili With Black Beans Categories: Poultry, Beans, Chilies, Herbs Yield: 10 servings 1 3/4 lb Boned, skinned chicken; - diced 2 md Red bell peppers; chopped 1 lg Onion; chopped 3 tb Olive oil 4 oz Can chopped green chilies 4 cl Garlic; minced 2 tb Chilli powder 2 ts Ground cumin 1 ts Ground coriander 30 oz Black beans (2 cans); rinsed - drained 28 oz Italian stewed tomatoes; cut - up 1 c Chicken broth 1 c Water In a Dutch oven, saute the chicken, red peppers and onion in oil until chicken is no longer pink, about 5 minutes . Add the green chiles, garlic, chilli powder, cumin and coriander; cook 1 minute longer. Stir in the beans, tomatoes, broth and 1/2 cup water; bring to a boil. Reduce heat and simmer, uncovered, for 15 minutes, stirring often and adding water as necessary.
