MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Sweet Potato Black Bean Chilli Categories: Potatoes, Vegetables, Chilies, Herbs Yield: 8 servings 1 tb Olive oil 3 lg Sweet potatoes; peeled, in - 1/2" dice 1 lg Onion; chopped 2 tb Chilli spice mix 3 cl Garlic; minced 1 ts Ground cumin 1/4 ts Cayenne pepper 30 oz Black beans (2 cans); - rinsed, drained 28 oz Can diced tomatoes; - undrained 1/4 c Brewed coffee 2 tb Honey 1/2 ts Salt 1/4 ts Pepper MMMMM---------------------OPTIONAL TOPPINGS-------------------------- Monterey Jack cheese; - shredded Mexican cheese blend; - shredded Pickled red onions Green onions; thin sliced In a nonstick Dutch oven, heat oil over medium heat. Add sweet potatoes and chopped onion. Cook and stir until crisp-tender, 8 to 10 minutes. Add chili powder, garlic, cumin, and cayenne; cook and stir 1 minute longer. Stir in beans, tomatoes, coffee, honey, salt, and pepper. Bring to a boil. Reduce heat; cover and simmer until sweet potatoes are tender, 30-35 minutes. Serve with toppings as desired.
