* Exported from MasterCook * Southwestern Chili Recipe By : TJ Hill - Appetites Catered Serving Size : 12 Preparation Time :0:00 Categories : Chili Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 lb Boneless beef sirloin -- chili grind 2 c Onion -- minced 1 tb Garlic -- minced 1/2 c Peanut oil 15 oz Tomato sauce 1/2 c Hot chile powder 15 oz Low sodium beef broth 1 tb New Mexico chile powder 1 tb Pasilla chile powder 1 tb Ground cumin 1 tb Vinegar 1 ts Oregano 1 ts Pepper 1/2 ts Cayenne 1/2 ts Tabasco sauce Combine beef, onions, and garlic. Mix well. Heat 3 tb oil in a Dutch oven, over a high flame. Add 1/3rd of the meat mixture and brown well. Remove from pan, and set aside. Repeat with remaining oil and meat. Combine browned beef mixture with remaining ingredients in Dutch oven, over a moderate flame. Bring to a boil, reduce heat, cover, and simmer for 2 hours.
