MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Southern Okra Bean Stew Categories: Vegetables, Beans, Herbs, Chilies, Rice Yield: 12 servings 4 c Water 28 oz Can diced tomatoes; - undrained 1 1/2 c Chopped bell peppers 1 lg Onion; chopped 3 cl Garlic; minced 1 ts Italian seasoning 1 ts Chilli spice mix 1/2 ts Hot pepper sauce; - up to 1 ts 1/2 ts Salt 1 Bay leaf 4 c Cooked brown rice 32 oz Kidney beans (2 cans); - rinsed, drained 24 oz Tomato sauce (3 cans) 16 oz Bag frozen sliced okra In a large Dutch oven, combine the first 10 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Add the rice, beans, tomato sauce and okra. Simmer, uncovered, until the vegetables are tender, 8-10 minutes. Discard bay leaf.
