MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chocolate Chip Red Velvet Whoopie Pies Categories: Cookies, Cheese, Chocolate Yield: 24 servings 15 1/4 oz Box red velvet cake mix 3 lg Eggs 1/2 c Oil 2 ts Vanilla extract MMMMM--------------------------FILLING------------------------------- 8 oz Cream cheese; softened 1/2 c Butter; softened 2 c Confectioners' sugar 1 c Miniature semisweet - chocolate chips Set oven @ 350°F/175°C. In a large bowl, combine cake mix, eggs, oil and extract; beat on low speed 30 seconds. Beat on medium 2 minutes. Transfer batter to pastry bag; cut a 1/2" hole in the tip of bag. Pipe 1 x 1-1/2" hearts onto parchment lined baking sheets, spacing hearts 1" apart. Bake until edges are set, 6-8 minutes. Cool on pans 2 minutes. Remove to wire racks to cool completely. For filling, in a large bowl, beat cream cheese and butter until blended. Gradually beat in confectioners' sugar until smooth. Stir in chocolate chips. Spread filling on bottoms of half the cookies.
