3MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Scotcharookies Categories: Cookies, Snacks, Grains Yield: 12 servings 1 c Butter-flavored shortening 1/2 c Butter; softened 3/4 c Brown sugar; packed 1/4 c Creamy peanut butter 2 lg Eggs; room temperature 1/4 c Light corn syrup 3 1/2 c A-P flour 3 3/8 oz Box instant butterscotch - pudding mix 2 1/2 ts Baking powder 1 ts Corn starch 1/2 ts Baking soda 1/4 ts Salt 1 c Rice Krispies 1 c Semisweet chocolate chips 1/2 c Butterscotch chips Set oven @ 300°F/150°C. In a large bowl, beat shortening, butter, brown sugar, and peanut butter until smooth. Beat in eggs and corn syrup. In another bowl, whisk flour, pudding mix, baking powder, corn starch, baking soda, and salt. Gradually beat into peanut butter mixture. Stir in Rice Krispies. Shape dough into 12 balls. Place 4" apart on parchment-lined baking sheets. Press tops to flatten to 1" thickness. Bake until tops appear dry, 22-24 minutes. Let cool on pans 2 minutes before removing to wire racks to cool completely. In a small bowl, melt chocolate and butterscotch chips together; stir until smooth. Spread over tops of cookies.
