In a pan, cook together, equal amounts of oil and flour (usually 4 tb each) with one chopped onion. When brown, add 2 cups chicken broth. Keep adding broth until a smooth consitency. Add half a can enchilada sauce and stir, taste, add salt to taste. Put about a dozen tortillas in a dish towel and place in the microwave for 2 minutes. Take one tortilla and place it in a greased casserole pan. Add a little meat and roll, place down in the cookie sheet continue this until the pan is full. Cover the enchiladas with the "gravy".
