                            Freezer Enchiladas

                        Chicken or ground beef
                        Corn tortillas
                        Enchilada sauce
                        Flour
                        Oil
                        Monterey Jack cheese
                        Onion

Use cooked chicken or ground beef. In a pan, cook together, equal
amounts of oil and flour (usually 4 tb each) with one chopped onion.
When brown, add 2 cups chicken broth. Keep adding broth until a
smooth consitency. Add half a can enchilada sauce and stir, taste,
add salt to taste. Put about a dozen tortillas in a dish towel and
place in the microwave for 2 minutes. Take one tortilla and place it
in a greased casserole pan. Add a little meat and roll, place down in
the cookie sheet continue this until the pan is full. Cover the
enchiladas with the "gravy". Cover with grated Monterey Jack cheese
and bake for 30 minutes at 350°F.
