MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Greek-Style Lemon-Garlic Chicken Categories: Poultry, Potatoes, Vegetables, Citrus, Herbs Yield: 8 servings 8 md Yukon Gold potatoes 1 c Greek olives; pitted 8 Bone-in chicken thighs 1/2 c Olive oil 3 tb Lemon juice 6 cl Garlic; minced 2 ts Salt 2 ts Dried oregano 1/2 ts Pepper 1 1/2 c Chicken broth Set oven to 375°F/190°C. Scrub potatoes; cut each into 8 wedges and place in a shallow roasting pan. Top with olives and chicken. In a small bowl, whisk oil, lemon juice, garlic, salt, oregano, and pepper until blended. Drizzle over chicken and potatoes. Pour chicken broth around chicken into pan. Bake, uncovered, until a thermometer inserted in chicken reads 170°F/77°C and potatoes are tender, 60-70 minutes.
