MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Buckwheat Stuffed Peppers Categories: Stuffed, Vegetables Yield: 8 Servings 4 Green bell peppers 2 c Cooked buckwheat 2 Sticks celery; finely -chopped 2 tb Oil 1/2 ts Ground cumin 1/2 ts Ground coriander 2 tb Fresh parsley; finely minced 1/4 c Roast peanuts or walnuts 2 md Tomatoes; skinned Salt and pepper to taste Cut green peppers vertically and remove seeds to make 8 hollow shells. Steam the peppers until not quite soft. They are then ready for stuffing. Chop the celery fine and sauté it in the oil with the herbs, spices, and nuts. Chop the tomatoes into a bowl and add the celery when it is almost soft. Mix in the buckwheat, salt, and pepper. Use this mixture to stuff bell peppers. Oil the skins. Bake at 350°F for 15 minutes.
