MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Garlic & Artichoke Roasted Potatoes Categories: Potatoes, Vegetables, Citrus, Herbs Yield: 10 servings 2 1/2 lb Medium red potatoes; in 1 - 1/2" dice 16 oz Frozen artichoke hearts - (2 pkg) 8 cl Garlic; halved 3 tb Olive oil 3/4 ts Salt 1/4 ts Pepper 1/4 c Lemon juice 2 tb Fresh parsley; minced 1 ts Lemon zest; grated Place the potatoes, artichokes and garlic in a 15x10x1" baking pan coated with cooking spray. Combine the oil, salt and pepper; drizzle over vegetables and toss to coat. Bake, uncovered @ 425°F/218°C for 35-40 minutes or until tender, stirring occasionally. Transfer to a large bowl.
