MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Garlic Parmesan Smashed Potatoes Categories: Five, Potatoes, Cheese Yield: 6 servings 2 1/2 lb Small red potatoes 8 tb Olive oil; divided 1 c Parmesan cheese; grated 4 cl Garlic; minced Set oven @ 450°F/232°C. Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 15-20 minutes. Drain. Drizzle 2 tb oil over the bottom of a 15x10x1" baking pan; arrange potatoes over oil. Using the bottom of a glass or a potato masher, flatten potatoes to 1/2" thickness. In a small bowl, combine Parmesan, garlicm and remaining 6 tb olive oil; spoon over potatoes. Roast until golden brown, 25-30 minutes.
