---------- Recipe via Meal-Master (tm) v8.02 Title: Baked Zucchini Boats Categories: Vegetables Yield: 8 servings 4 md Zucchini 1 sm Onion, yellow, chopped 1 lg Egg, beaten 1/2 lb Ground beef, lean 2 c Spaghetti sauce,canned * 2 tb Parsley, fresh, chopped 1 c Rice,long grain cooked Garlic clove, chopped 2 tb Olive oil 1/2 c Bread crumbs 3 tb Dill, fresh, chopped 2 tb Parmesan cheese, grated Split zucchini lengthwise, scoop out seeds. Saute ground beef, onion, garlic, dill, and parsley in olive oil. Remove from heat. Add cooked rice, beaten egg, 1/4 c bread crumbs and mix well. Fill zucchini with mixture and place in a baking dish. Cover with spaghetti sauce, sprinkle cheese and remaining bread crumbs on top.
