---------- Recipe via Meal-Master (tm) v8.01 Title: Coffee Cake Categories: Breads Yield: 6 servings 1 Cake compressed yeast (2 if 1 Egg, well beaten -time is limited) 5 c Flour 1 1/2 c Lukewarm water 1 tb Grated orange peel 1/2 c Sugar 3/4 c Chopped raisins 1 3/4 ts Salt 1/2 c Chopped nuts 2 tb Cinnamon 1/4 c Melted shortening Soften yeast in lukewarm water. Add 6 tablespoons of sugar, the salt, melted shortening, and egg. Add raisins, orange peel, and flour, beating thoroughly after each addition until a soft dough is formed. (The dough should be softer than for bread). Cover with a warm, damp cloth; allow to double in bulk. Work down and form in two loaves. Place in well-oiled pans. Sprinkle with chopped nuts, cinnamon, and 2 tablespoons sugar. Allow to double in bulk. Bake in hot oven (425°F) 30 minutes. 2 small loaves. The Household Searchlight - 1941 -----
