MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Traditional Shepherd's Pie * Categories: Pork, Beef, Vegetables, Potatoes, Herbs Yield: 8 servings 1 lb Ground beef 3 sl Bacon; diced 1 sm Onion; chopped 2 cl Garlic; minced 1/4 ts Dried oregano 1/2 c Tomato sauce 4 1/4 oz Chopped ripe olives; - drained 5 1/2 c Hot mashed potatoes; made - w/o milk & butter 2 lg Eggs; lightly beaten 2 tb Butter; softened 1 tb Minced fresh cilantro 1/4 ts Salt Additional butter; melted * Actually this is a "cottage" pie. True Shepherd's Pie is made with lamb/mutton. Set oven @ 375°F/190°C. In a large skillet, cook beef over medium heat until no longer pink; drain and set aside. In the same skillet, cook bacon, onion, garlic and oregano until bacon is crisp; drain. Stir in the tomato sauce, olives and beef. Simmer, uncovered, until heated through, about 10 minutes. Meanwhile, combine the mashed potatoes, eggs, butter, cilantro and salt. Spread half of the potato mixture onto the bottom and up the side of a greased 9-in. pie plate. Layer with beef mixture and remaining potato mixture. Bake 20 minutes. Brush the pie with melted butter. Bake until top is golden brown, about 10 minutes longer.
