* Exported from MasterCook * Corn Quiche Recipe By : One Million Recipes CD Serving Size : 6 Preparation Time :0:00 Categories : Dinner Pies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 c Cheese crackers -- fine crushed 6 tb Butter 2 tb Flour 1/2 ts Salt 1/4 ts Celery salt 1/8 ts Pepper -- (prefer white) 1/2 ts Dried minced onion -OR- 2 tb Fresh onion -- minced 1 1/4 c Milk 2 Eggs -- beaten 2 c Cooked corn fresh frozen or canned Mix cracker crumbs and two tablespoons butter. Pat into a glass pie plate, reserving 1/2 cup for later. Melt remaining butter (4 tb), blend in flour, seasonings, and onion. Then add milk and cook until thickened (medium heat), stir constantly. Gradually add hot mixture to eggs. Blend well and add corn. Pour into lined pie plate or quiche pan on top of crumbs. Sprinkle with the reserved crackers. Bake at 400°F for 20 minutes.
