MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Buffalo Chicken Meatballs Categories: Poultry, Vegetables, Chilies Yield: 24 servings 3/4 c Panko bread crumbs 1/2 c Louisiana-style hot sauce; - +1/3 c, divided 1/4 c Celery; chopped 1 lg Egg white 1 lb Lean ground chicken MMMMM--------------------------OPTIONS------------------------------- Ranch or blue cheese salad - dressing Celery leaves; chopped Set oven @ 400°F/205°C. In a large bowl, combine bread crumbs, 1/3 cup hot sauce, celery and egg white. Add chicken; mix lightly but thoroughly. Shape into twenty-four 1" balls. Place on a greased rack in a shallow baking pan. Bake 20-25 minutes or until cooked through. Toss meatballs with remaining hot sauce.
