* Exported from MasterCook * Turkey Vegetable Stroganoff Recipe By : From: SuzyWert@aol.com Serving Size : 1 Preparation Time :0:00 Categories : Freezer Meals Turkey Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup dry sherry 2 tablespoons Dijon mustard 1 1/2 teaspoons minced garlic 1/8 teaspoon crushed red pepper flakes -- (optional) 1 tablespoon olive oil 1 1/2 cups baby cut carrots -- halved 5 tablespoons chicken broth 1 medium onion -- sliced thin & -- separated into -- separated into rings -- sliced thin and cut -- in half (2 cups) 1 8 ounces pkg sliced mushrooms -- rinsed & drained 1 1/2 tablespoons lite soy sauce 2 tablespoons flour 1/2 package (16 oz.) wide noodles 2 teaspoons salt snipped parsley In small bowl, combine sour cream, sherry and mustard; set aside. In large skillet, sauté garlic and crushed pepper in olive oil (about 2 min.). A dd carrots and chicken broth; simmer, covered. over medium heat 5 minutes. Add onion, simmer 5 min. more. Stir in turkey, mushrooms, soy sauce and flour. Simm er, covered, until mushrooms are tender (5-7 min.) Stir in sour cream mixture; cook until heated through. Do not boil. Cook noodles according to pkg. directions, using 2 tsp. salt in water. Drain. S erve stroganoff over noodles; sprinkle with smipped parsley.
