MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Greek Tilapia Categories: Seafood, Cheese, Chilies, Herbs, Citrus Yield: 4 servings 4 Tilapia fillets (4 oz ea) 4 ts Butter 1 lg Egg 3/4 c Tomato & basil feta cheese; - crumbled 1/4 c Milk 1/4 ts Cayenne pepper 1 lg Tomato; seeded, chopped 1/4 c Ripe olives; chopped 1/4 c Pine nuts; toasted 1 tb Fresh parsley; minced 1 tb Lemon juice 1/8 ts Pepper In a large cast-iron or other ovenproof skillet, brown fish in butter. In a small bowl, combine the egg, cheese, milk and cayenne; spoon over fish. Sprinkle with tomato, olives and pine nuts. Bake, uncovered, at 425°F until fish just begins to flake easily with a fork, 10-15 minutes. In a small bowl, combine the parsley, lemon juice and pepper; drizzle over fish.
