MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Four Cheese Smoked Mac 'n' Cheese Categories: Pasta, Cheese, Dairy Yield: 8 servings 16 oz Elbow macaroni 1/4 c Butter 1/4 c A-P flour 3 c Milk 8 oz Cream cheese; in chunks 1 ts Salt 1/2 ts Black pepper 8 oz Extra sharp Cheddar cheese; - shredded, divided 8 oz Smoked Gouda cheese; - shredded, divided 4 oz Parmesan cheese; shredded Cook pasta according to package directions. Drain well. Meanwhile, in a medium saucepan, melt butter; whisk flour into butter and cook over medium heat 2 minutes. Whisk in milk and bring to a boil; remove from heat. Stir in cream cheese, salt, and pepper until mixture is smooth. Set oven @ 300°F/150°C. Coat a disposable 9-1/2 x 11 x 2" aluminum roasting pan with cooking spray. In a large bowl, combine 2 cups cheddar, 2 cups smoked Gouda cheese, the Parmesan cheese, pasta, and sauce. Spoon mixture into roasting pan. Cover with aluminum foil and bake (or smoke) 45 minutes.
