MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Baked Pasta With Smoked Chicken and Wild Mushrooms Categories: Pasta, Chicken Yield: 4 Servings 1 lb Rotini, twists, spirals or - fusili 3 oz Sun dried tomatoes 1 tb Olive oil 2 cl Garlic; minced 2 lg Shallots; finely chopped 8 oz Assorted wild mushrooms; - sliced 8 oz Skinless smoked chicken; - diced 1 bn Fresh oregano; coarsely - chopped -OR- 2 tb Dried oregano 1 c Chicken broth; skimmed of - fat Salt Freshly ground pepper 6 oz Low fat provolone or - Mozzarella cheese; shredded - (about 1 1/3 c) Preheat oven to 400°F. Cook pasta according to package directions; drain. Soak sun-dried tomatoes in lukewarm water for 5 to 6 minutes, or until soft; drain and chop. In large skillet over medium heat, heat oil. Add garlic and shallots; cook 3 to 5 minutes until lightly browned, stirring often. Add mushrooms, chicken, sun-dried tomatoes, and oregano; cook 1 minute, stirring often. Add chicken broth; cook 4 to 5 minutes, or until sauce is slightly reduced (I actually had to just slightly drain the whole thing - way too watery!). Season with salt and pepper to taste. In a large bowl, toss cooked pasta with sauce. Transfer to large ovenproof baking dish; top with cheese. Bake 5 to 6 minutes, or until cheese is melted. Per serving: 299 calories, 20 g protein, 17 g carbs, 6 g fat, 18% calories from fat, 32 mg cholesterol, 414 mg sodium I made it for dinner tonight, Sean said it could be a "repeat"...
